Bonito are caught through physically intense rod-and-reel fishing and immediately frozen on the boat. They are then taken to the processing plant, where they are carefully grilled over hot coals.Kagoshima’s Makurazaki City boasts a fishing history reaching back 350 years, and is proud of its position as the largest producer of dried bonito flakes in Japan.
Bonito are fished using a rod and a lure, a fishing method used in Japan since ancient times. Because the bonito are brought up to the boat one at a time, the fishermen are able to fish with care, which allows them to catch the best and freshest bonito.

How best to eat

1) Thawing
Put under running water while still vacuum packed.
(In summer: 7-8 minutes  In winter: approx. 10 minutes)
2) Thaw the seared bonito while leaving the core of the fish slightly frozen.
Cut into thickish slices and enjoy with your favorite flavorings such as sliced onion, garlic, and ginger.
